Maybe it’s the firepower, or maybe it’s the time spent with your family, but food just tastes better when it’s cooked on the grill. In celebration of the beginning of the summer season, AIS has compiled a list of five surprisingly amazing items hot off the grill:
1. Lemon Kebabs: Take a surprising twist on normal vegetable kebabs by adding lemon quarters on the skewer. Vegetable combination list is infinite: from peppers to onions, mushrooms, and tomatoes. The grilling softens the sourness of lemons and adds the perfect amount of citrus flavor to the veggies.
2. Pizza: Once you’ve tried pizza on the grill, you’ll find it hard to go back to having it any other way. The smoke from the barbecue infuses the crust with an amazing earthy flavor that’s just impossible to get in the oven.
3. Artichokes: Grilling artichokes gives them an amazing smokey flavor. Boil the artichokes before grilling, and then slice them in half. Scoop out the few first layers, brush with some olive oil, and sprinkle with salt. Turn occasionally while it’s grilling, about four to five minutes on each side. Take off the heat, squeeze on some lemon juice, and enjoy.
4. Squid: You can get squid frozen or fresh in the seafood department of your grocery store, just be sure double check to make sure it’s been cleaned. Cook it tossed in olive oil on the hottest part of the grill, turning once or twice, until just cooked through for about 2-4 minutes.
One of the biggest obstacles many people have to getting creative with their grill is a lack of understanding of the incredible range of foods that can be cooked on it. Even though burgers and chicken are grill classics, these foods will be sure to impress your guests at your next backyard picnic or BBQ.
